P.S Because you are making this vermouth yourself, you can add different botanicals to experiment with different flavours – and making something totally unique!
Add a little bit of spirit, and then infuse with botanicals for three days, before straining them out. And there you have it!
Ingredients:
-300ml oxidized white or rose wine
-1 orange peel
-1 tsp Cardamom Seeds
-1/2 tsp fennel seeds
-1 tsp coriander seeds
-1 bay leaf
-1 wormwood leaf (totally optional)
-50ml Brandy (or any other white or brown spirit you have in the back of the cupboard)
Method:
-Add the citrus husks, sugar and citric acid to a non-reactive container
-Stir, cover and leave overnight
-Add boiling water
-Stir and leave to cool completely
-Strain, and bottle. Will last for up to 1 week in the fridge
